When the mushrooms are completely cool, transfer them to a large bowl and add the turkey, parsley, and soaked crumbled bread. With clean hands, mix the ingredients together thoroughly. Form four individual patties about ¾ inch thick. Season on both sides with salt and pepper.

Heat a countertop electric griddle or grill, a stovetop griddle or grill pan, or a large nonstick skillet to medium-high heat (or, if the weather is nice, prepare a fire in an outdoor grill). Spray with nonstick cooking spray (or, away from the grill fire, spray the cooking grid with nonstick cooking spray before placing it on the grill). Cook the burgers until they are nicely browned and still look juicy, 4 to 5 minutes per side. At the same time, lightly spray the onion slices on both sides with nonstick cooking spray, season to taste with salt and pepper, and cook them alongside the burgers until nicely browned, 2 to 3 minutes per side. When the turkey burgers are done, transfer them to a heatproof platter and cover loosely with aluminum foil; the residual heat will continue to cook them to perfect doneness without drying them out.
